Caramelo reacts rapidly to pruning. If you top the main stem and see the secondary branches shooting up vigorously within a few days, you are on the right track.
If it stretches too much, you can gently bend and tie down the tallest branches (Low Stress Training) or weave them horizontally through a trellis net to keep an even canopy.
My own learning curve with Caramelo was quite an adventure. The first time I grew it, I underestimated its Sativa genetics because it looked so compact during the first few weeks. I let it veg for too long, and once I flipped it to 12/12, it completely took over my grow tent, forcing me to do some emergency super-cropping.
The mistake I made at the beginning was treating it like a standard Indica hybrid. The small change that made the biggest difference was switching to a SCROG setup and flipping to flower much earlier. Once I started weaving those vigorous branches through the net, the yield exploded, and I was finally able to fully appreciate its massive, resin-coated colas and that incredible sweet lavender aroma without fighting the canopy.

I grew it by tying up the tips to give light to the low branches at the beginning but it was a matter of experience with my second plant (critikal +) it was less complicated and I already had in harmony the hours of light and the subject of water.

caramelo is a productive plant and with a very rich flavor, hard buds sometimes can have problems of mold if your climate is humid, eat well enough and indoors is brutal especially for growing in sog, you will get about gram per watt if you walk ready with the food, by the way resin is well loaded, the buzz is loose for my taste but makes up for it with its flavor.
